Egg shortages lead to surge in demand for backyard chickens

If you can’t live without eggs, you’re not alone.
After 12 months of empty egg shelves in supermarkets, thousands of people across Australia are looking for ways around the shortages.
Many are now taking up backyard production, while shortages have also inspired a new egg farm in the only part of the country without a local industry.
And the intense scramble for both chickens and eggs in recent months has left some poultry farmers stunned.
What’s going on with egg shortages?
About 10 per cent of Australia’s egg-laying flock died or were killed in bird flu outbreaks in 2024 and 2025.
The industry says the ongoing shift from caged production to free-range eggs has also caused supply chain disruptions.
The cost of a dozen eggs has gone up 16 per cent since early 2020, including a sharp price rise when bird flu hit Victoria, New South Wales and the ACT in May 2024.
“It’s just been intense — nearly to the point it almost feels like we’re being harassed with people wanting eggs,”
free range egg producer Phil Glover said.
Second-hand chooks in demand
Every year, Tasmanian farmers Phil and Angela Glover sell off their older chickens to backyard enthusiasts, to give the birds a second chance at life.
Mr Glover said they were shocked by what happened when they announced they were selling 1,000 of their older free-range hens.
“Within one hour of that post going up, the birds were gone,” he said.
“It normally takes three to five weeks to clear that amount of birds, but we were just absolutely inundated with enquiries and demand.”
So many people flooded to the farm that the Glovers had to bring in traffic management.
Ms Glover said they made a deliberate decision to spread the love around the community.
“It was important to us that all the families got a few chickens each — we could have sold them off to three or four people,” she said.
Remote area egg shortages
The Northern Territory is Australia’s only region with no commercial egg production.
Supermarkets have been bare of eggs for weeks on end, as eggs have been diverted to cover shortfalls in bird flu-hit regions.
But out of the shortages has come some good news — the Territory’s first egg farm in decades.
Construction is underway on the first shed at Colleen and Jeremiah Jones’s new free-range farm in Darwin’s rural area.
They’re starting small, with an initial permit for 400 chickens, but they are not short on ambition.
“We want to get big, we want to get to be able to supply NT — that’s our hope, to supply Darwin and the outer suburbs,”
Ms Jones said.
“So, we’re looking at getting to the 10,000 chicken mark.”
‘Chicken king’ of the NT
With no local hatchery, Darren Letton is the unofficial chicken king of the Northern Territory — though he lives 3,000 kilometres south of Darwin.
Once a year, Mr Letton takes a load of laying hens from his farm in South Australia’s Riverland region to grateful customers across the Northern Territory.
Orders have almost doubled from about 1,200 chickens in Mr Letton’s first run in 2020, to 2,300 last year.
With this year’s delivery still months away, he said he already had orders for 900 chickens.
“I follow a few of the Facebook groups up there and I can see there is always demand up that way,” Mr Letton said.
“I haven’t even advertised yet and I’m already having the repeat customers ask me [for chickens].”
What about egg alternatives?
In the scramble for fresh chicken eggs, home cooks shouldn’t overlook egg substitutes, says Jennifer Thompson from the Alternative Proteins Council.
Chickpea water, known as aquafaba, as well as vegetable protein, chia seeds, corn, potato and tapioca starches can all replace eggs in recipes.
“Not only can these options help ease supply chain disruptions, they also offer valid alternatives to consumers with egg intolerance or allergies, dietary preferences and curiosity,” Ms Thompson said.
And with the precision fermentation industry growing, cell cultured egg products could feature on menus of the future.
New foods or ingredients featuring cell cultured eggs “hold future promise to supplement reliance on traditional egg production … and potentially contribute to food security,” Ms Thompson said.
